We eat scones on a fairly regular basis and lately I vary the recipe using small tweaks to sneak in some vegetables and make them less sweet. This last time they turned out really great so I thought I’d share the “new” recipe with you.
There is a little monster living inside of me, demanding chocolate on pretty much a daily basis. This does not mean the sugar-laden milk chocolate. The monster does not actually fancy this any more, but rather anything with cacao in it. Really dark chocolate normally helps but sometimes the monster wants cookies or crackers. Last week I had one of those days… So I came up with these very chocolaty crackers. Nut free, gluten free, lactose free, egg free and (almost) guilt free! Can it get any better?

How about, I bake you a lovely and healthy carrot cake – and you bring us some dark chocolate eggs this year? We’d like to stay clear of the sugar laden colorful stuff, and just go with the natural goodness that doesn’t contain any E-numbers or mess up our blood sugar. Do we have a deal?
My husband has a soft spot for vanilla puddings and has been asking me to come up with one that will still fits our lifestyle. My patient kids have been forced (poor kids! ) to eat puddings every day now for some time, while I tried different combinations – until I was happy with the result. And this is it! An oven baked vanilla pudding with blueberries!
Making our favorite sunshine pancakes on a weekly basis it got me thinking that the carrot base would be perfect for muffins. We all know the classical “carrot cake” often using cinnamon, so with that in mind I made this recipe. Add a few more spices to really get the taste buds going… and we end up with spicy carrot muffins!

Wanted to make a quick lunch for the kids, and myself, but didn’t feel like cooking. In my former life this would have meant having a sandwich.
