In my world, treats are very important and should be part of the daily life. A treat can be a nice scrub in the shower that makes your skin soft and leaves a lovely scent. It can be a good book, or a massage. It can also be the food you eat, and I believe we should enjoy everything we put into our mouths – and still treat our bodies with respect.  If you don’t want to feel like crap, basically don’t put crap into your mouth! Instead, pick the nourishing stuff that are good for your body, and combine them to nice creations. Like this spontaneous blueberry pie I made the other day. Filled with just good ingredients – a treat for your body and your taste buds!

Start off with blueberries. In Luxembourg our local organic shop has great tasting frozen berries that are reasonable priced.  3.69 Euro for a bag of 300g – and their taste reminds me of my childhood, picking blueberries up in the Swedish forests. This is the real stuff! (If you are wondering what’s reasonable about 3.69 for 300g – I’ll come back to that later…)

Empty them into a pie form or a plain oven form and put them in the oven while heating it (the oven) up – turn it on to 180 C (350F)

Meanwhile get a bowl out and mix the following:

  • 2 eggs
  • 100 ml (0.4 cup) shredded coconut
  • 50 ml (about 3 tbsp’s) chia seeds
  • 1 or 2 tbsp’s honey
  • and ½ teaspoon vanilla powder OR 1 teaspoon cardamom (whatever you like better.) I’ve tried both and they both turned out great…

Check if your blueberries have thawed by now, and if, add:

  • 2-3 tbsp’s coconut oil

and stir while the oil is melting

Then add the egg mix and stir until all is a blended purple mix.

If the look of that freaks you out cause it reminds you of that weird porridge your mean grandma tried to make you eat as a child –  you might want to sprinkle some almond slices over it. Just to make it look nicer. Childhood dramas…. what can I say…

Then bake in the middle of the oven for 25 minutes.

When done, leave to cool down for at least 20 minutes. The chia seeds will keep swelling and make a “cake” out of the blueberry mash you first had.

If you can handle cream – whip some and serve with that. Double yum! I did not, since cream makes me sneeze 🙂 True! Sometimes I think it’s worth it – some times not.

In the end, this makes about six pieces for a total of about 5 Euro (if you went for the really great organic blueberries, the organic chia seeds and the high quality organic shredded coconut.)  Let me know what baker or café can beat that price 🙂
