First off, I didn’t invent these 🙂 There are plenty of recipes online of the simple banana pancake but this is my version.

It’s a very quick and simple recipe. For two portions, in a bowl:

  • 1 banana
  • 4 eggs
  • 4 tbsp buckwheat flour (optional – but gives great texture)
  • a dash of vanilla powder
  • a pinch of salt

Mix all using a hand held mixer. If you don’t have one, first mash the banana and then add the rest and whisk.

Fry on low to medium heat in coconut oil. I have a special pancake iron and this makes 14 pancakes.

Serve with nut butter, maple syrup, jam, fruit, berries or whatever you have available.
