Most Swedish parents would be familiar with a childrens book called “Pannkakstårtan” (Pancakes for Findus). It’s about an old man and his cat Findus, making a pancake layer cake for the cats birthday. My kids loved this book and I still think of it while making my grain free version of this very Swedish and very simple cake. You don’t need an oven – only a pan.
We will start by preparing the chia seed jam we need for the filling. You need a bowl and a pot with hot water. In the bowl, mix the following:
- 400 ml (1 1/2 cup) frozen berries – I like blueberries and raspberries, half-half
- the juice of one orange (grate the zest, peel, of it first – you need it for the pancakes)
- 3 tbsp. chia seeds
Place the bowl in the pot with hot water to thaw the berries. Stir every now and then and once the berries are thawed you can even mash them a bit.
Meanwhile start making pancakes. You need a big bowl and ideally a hand held mixer (or a good blender)
- 2 bananas
- a good handful spinach leaves
- the zest (grated peel) of one organic orange
- the zest (grated peel) of one organic lemon
- 8 eggs
Use the hand held mixer to make a mash out of it. If you don’t have one you can chop the spinach finely, and just use a fork to mash the bananas. Then mix with a spoon or a whisk.
Once mixed, add
- 2 tbsp. coconut flour
- optionally 1 teaspoon baking powder
mix again and then heat up your pan.
Fry the pancakes one by one in coconut oil or butter. Try to make them rather thin by tilting the pan back and forth a few times to let the pancake spread.
I like the pancakes to be a bit uneven. It ads to the childish look of the cake.
Remember to also stir and mash around the chia seed berry jam every now and then.
Once you have a few pancakes you can start layering them with jam.
I like to only spread jam in the middle of the pancake, and let the sides hang down a bit.
Keep frying pancakes and layering with jam. Last layer should be a pancake. I like to top of with a yogurt sauce – which is very simple:
- 100 ml (almost 1/2 cup) natural yogurt
- 1/2 tbsp. honey
- a squeeze of juice from an orange – just half a tbsp.
Pour the yogurt sauce over the pancake layer cake, and decorate with a few berries, roasted almonds or what ever else you can come up with.
Serve as breakfast, lunch, snack or dessert. Pretty impressive once you slice it and see the layers inside!
