Lately I keep running in to people who are grain free but also allergic to nuts. I normally use nut flours instead of normal grain flours, but of course that does not suit everyone. So, to give more people a chance to try my recipes I try to create something different every now and then. This is a grain free, nut free and lactose free chocolate cake that also does not have any banana (which most of my other cake recipes have). Only a few ingredients – Very chocolaty and very amazing! Give it a go!
Any possibility to sneak in a bit of coconut oil into my diet is welcome. Same goes for flax seeds (linseeds). And generally I like recipes that are raw, vegan, nut free and also healthy. This is one of those! Medjool dates is the main ingredient and is the source of sweetness. I’ve read that dates are one of the healthiest sweet food there is. True? I choose to believe it and will indulge in these truffles every now and then without any guilt!

This was a Sunday morning recipe. I wanted to treat the family to something special for breakfast on our last Sunday before the schools started again after the holiday. The muffins turned out lovely and we ate the remaining ones on a walk in the nice weather – like a picnic. Now I need to buy more of those freeze dried strawberries so I can make them again!
