The perfect grain free chocolate muffin with a texture very similar to a normal old school muffin with plain flour. Possible? Yes, by coincidence I made up the recipe and it was a hit!
Turn the oven on to 180 C (360 F) and prepare muffin forms on a baking tray.
In a big bowl:
- 1 medium sized zucchini, grated
- 1 banana
- 4 eggs
- 2-4 tbsp honey or maple syrup, depending on who is eating… 🙂
- 3 tbsp. coconut oil
Mix with a hand held blender until smooth
In a smaller bowl:
- 5 tbsp. almond flour
- 100 ml (0.4 cup) coconut flour
- 5-6 tbsp. cacao powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Mix and then add to the wet ingredients.
Mix all well and fill muffin forms. Bake in the lower part of the oven for 25 minutes.
Enjoy just as they are, or top off with some pomegranate or other fruit or berries.
Serve your most pickiest friend and don’t tell them they are grain free 🙂 They’ll never guess!
