Our favorite sweet potato and carrot bread

Since my son started packing lunch boxes again, grain free bread has been a hit in this household. I’m always using vegetables as a base – like in the root celery bread and the zucchini bread. This time it was carrots and sweet potato and I think this was the best one so far! I had to make another, bigger batch again a day later since my kids totally loved it!

Raspberry and Ginger Cupcakes – a taste explosion!

There I was, wondering how to eat more ginger. It’s supposed to be very healthy – but what do you really do with it? Bake? Why not! To balance the strong taste of the freshly grated ginger I used raspberries and the combination turned out to be absolutely amazing! This is a treat!

Albins genius tomato, basil and oregano bread

The other day I was making root celery bread and my son, Albin, walked into the kitchen. When I told him what I was planning on doing he suggested that I add dried tomatoes, basil and oregano to the dough – “it will taste like Pizza” – he said. Not a bad idea…. And the “bread” actually turned out really great.

Scandinavian Tosca Berry Pie

We never keep much in our freezer, but one thing that we always have are berries. Bananas are always in our fruit bowl, and eggs – always plenty in the fridge. The combination makes an excellent base for a berry pie! Top it off with some coconut and almonds and boom – berry pie meets Scandinavian Tosca cake! Amazing is all I can say! (Well – I could add “easy” and “quick” as well…)

Elins Cheese, Cherry and Cranberry Cake

This cake started with my daughter, Elin, asking me to please bake with her. She wanted to make something like a cheesecake, but we did not have enough “cheese” for that. So we checked the fridge for what we did have and what needed to be used. Cranberries, cherries and a bit of Philadelphia crème cheese. Can you make a halfway cheesecake? We gave it a go! This one would fit real nicely in a category called “weird combinations – great results”

Bedtime thoughts and carrot pancakes for breakfast

Sometimes I have the weirdest thoughts on my mind right before I go to sleep. Very often they include food. And regulary I think of new weird combinations of ingredients. Last night I made up this recipe for carrot pancakes in my head – and of course I had to try it out this morning. I’m as surprised as anyone that they turned out so great!

Carrot cupcakes that lifts a bad mood

Do you ever bake when in a bad mood? You know, to get into a better mood? I did that the other day and it resulted in these lovely little cupcakes. So, how does that help? Did I munch them all down? No – but my husband ate 5 of them in one go and declared me to be the best baker ever. That certainly helped :-)
